There's a mania in our society to cut out fats and other things like gluten. When I shop for meat, beef or pork, I always look for a healthy distribution of fat because it tastes good!!. I was in the Bath road store recently (I normally don't shop there) and picked up a platter of pork chops where most of the fat had been left on. Yea!!! Unfortunately, there was only one package like that in the fridge else I would have bought everything!!! I'm a 78 year old male and love good meat that schmecks. You gotta have the fat for moisture and taste
